Oh YUM!!! I would totally want to eat this all up! I LOVE the taste and smell of coffee (and chocolate for that matter) but we don't drink coffee so I wouldn't be able to make this. Make it and eat it and love it...and then post all about it so I can drool!

I could be wrong...but I *think* that the really hot coffee that you pour into the mixture takes care of the whole "raw" thing...lol, at least that is what I am telling myself :lol

raw eggs from a fresh source like say pasture fed chickens are not a worry for me.

There are a fair amount of desserts made in the same way. If you make this just make sure you pour the coffee in slowly like she says or you'll end up with some kind of scrambled egg/coffee funk. (Not literally, but you will cook those eggs into a nasty form!)

I wonder if you can make it with carob chips instead???

Even if you can't - I'm totally making this. Maybe since it will be completely NOT chewy, it won't break my DH's tooth.
