Mix 2/3 C of sugar and 1 tsp of cinnamon into a large bowl and roll each biscuit piece in mixture. Grease a bundt pan and drop pieces into it. In a small saucepan, stir together remaining sugar, butter, cinnamon and vanilla. Heat until it comes to a boil and pour over pieces. Bake in a 350 oven for 25 minutes. Dawn 03-30-2006 Thursday, 02:46 PM Pigs in a blanket 1 pkg. lil' smokies 4 cans cheap bisquits (cut in half) Roll 1 smokie and half buiscuit at a time and place on a baking sheet until filled. Bake at 350 degrees until golden brown. Shannon 03-30-2006 Thursday, 07:06 PM Caramel French Toast 1 loaf French bread, cut into 1 inch slices 1 cup brown sugar 1 stick butter or margarine, melted 1 tablespoon white corn syrup 5 eggs 2 cups milk, skim or 2% 1 teaspoon vanilla Combine brown sugar, butter, and corn syrup over low heat in skillet. Bring to simmer until sugar is melted and combines with butter and syrup. DO NOT BOIL OR OVERCOOK. IT WILL TURN TO CANDY. Spread the soft mixture into the bottom of well-greased 9x13 baking dish. Place French bread slices on top of the brown sugar mixture. Beat eggs with the milk and vanilla, and pour over the bread. Cover and refrigerate overnight. Bake at 350 degrees for 30-40 minutes, until bread is light golden brown and puffy. Shannon 03-30-2006 Thursday, 07:08 PM I had to pull out my notes from when Faithie was little for this: Cheesy Pasta: This is one of her absolute favorites. The little bit of spaghetti sauce give the pasta a great flavor without overdoing the spiciness or acidity of the tomatoes. You can also add some cooked ground chicken or turkey to this if you're looking for meat or extra proteins (just sautee the chicken/turkey and chop with a knife or spatula to get smaller pieces). 2 cups cooked pasta (either use small stars/alphabets or put larger pieces like rotini in food processor for about 5 seconds) 1/4 cup of margarine or butter 1/2 cup of shredded cheese (Velveeta is a good choice) 1/8-1/4 cup of water 3 Tbsp bottled spaghetti sauce -cook pasta (process if necessary, set aside) -in small saucepan, melt butter -add water to melted butter, then added cheese slowly, stirring the lumps out -add spaghetti sauce to mixture -simmer for a few minutes while stirring to prevent sticking -add pasta and stir to coat pasta -cook an additional minute or two, then remove from heat Make several servings. I portion it out and freeze it in individual containers Shannon 03-30-2006 Thursday, 07:08 PM Lentil Stew: 1/2 - 1 cup of lentils 1 small zucchini (diced) 1 small yellow squash (diced) 1 sweet potato (peeled and cubed) 1 white potato (peeled and cubed) 12 green beans (cut in quarters) 1 small leek (diced) 1 small parsnip (diced) 1 handful of shredded spinach leaves 1 carrot (cut into bite-sized pieces) soup boullion -cook lentils separate and set aside -in soup pot, combine all chopped veggies and cover with water (just to the tops of the veggie pile) -bring mixture to a boil, then add 2-3 tsp of boullion to taste (I use chicken boullion, but beef or veggie works too) -bring back to a boil, then simmer for about an hour -add lentils and simmer and additional 15 minutes, stirring occasionally. Stew is done if veggie are soft (use fork to check) -remove from heat and let cool -place stew in blender and pulse gently to attain lumpy/chunky texture if desired Shannon 03-30-2006 Thursday, 07:08 PM Kid Quesadillas: 1/2 Morningstar Farms veggie patty, cooked and crumbled 1/2 cup of cheese margarine 2 tortillas butter cooking spray Just mix the cooked veggie patty and cheese together in a bowl, melt some margarine in the pan. Spray one side of one tortilla with the butter spray, lay butter side down in the pan, layer the filling, spray the other tortilla (1 side) with spray and lay butter side up. Cook and flip and cook some more. Shannon 03-30-2006 Thursday, 07:10 PM Corn Muffins w/Stuff: 2 Boxes of Corn Muffin Mix (I use Jiffy) Milk Eggs Diced Up veggies (already cooked or leftover) Diced up turkey or chicken (already cooked) Mix the corn muffin mix together first till fairly smooth. Add in the turkey and veggies and mix till you have a "lumpy" consistency Spoon into muffin pans (I lined mine with the paper cups first) about 2/3 - 3/4 full Bake at 400 for about 20 minutes or until a toothpick comes out clean. These freeze well and are great for quick snacks! I had forgotten about it until my great grandfather was in town this weekend. (It's his recipe) Instead of stacking lettuce leaves, sliced tomatoes, sliced onion and pickles on your burger, chop it all up finely and put into a bowl. Mix with mayo and mustard with a little salt and pepper to taste. Put about 2 tablespoons on top of your patty and you don't have to worry about putting mayo or mustard on your bun. For some reason this tastes much better with everything chopped up together! Everything compliments eachother. It's good enough to eat on the side, too! hydiho 06-26-2006 Monday, 10:18 PM those all sound great!!
