I made this recipe tonight and it was really good so I thought I would share...
Easy Meatless Manicotti
*it is freezable*
First set:
2 c. shredded mozzarella divided into 1 1/2 cups and 1/2 cups
16 oz fat free cottage cheese
10 oz frozen chopped spinach
1/4 c. fresh parmesan cheese
1 1/2 tsp oregano
1/4 tsp salt
1/4 tsp pepper
------
Second set:
14 manicotti shells
26 oz pasta sauce
cooking spray
1 c. water
1. Preheat oven to 375
2. Combine the 1 1/2 c. of mozzarella and the rest of the first set of ingredients and spoon into unbaked manicotti shells.
3. Pour half the pasta sauce into the 13 x 9 in pan. Arrange the stuffed shells into a single layer in the baking dish.
4. Pour the remaining sauce over the shells. Then pour 1 c. water into the dish and top with the leftover 1/2 c. mozzarella.
5. Cover tightly with foil and bake for an hour.
