IansMommy 03-19-2006 Sunday, 10:21 PM Baked Apricot Chicken 12 chicken thighs 1-1/2 cups apricot preserves 1-1/2 cups really good French dressing (or Russian dressing for slightly different taste) 1 package Lipton onion soup mix DIRECTIONS: Preheat oven to 350 degrees F (175 degrees C). In a medium bowl combine the jam, dressing and soup mix. Mix together. Put chicken pieces in a 9"x13" inch baking dish. Pour apricot mixture over chicken and bake uncovered in the oven for 50 to 60 minutes. IansMommy 03-19-2006 Sunday, 10:24 PM MEXICAN CASSEROLE 1 pound lean ground beef 1 (15 ounce) can ranch-style beans 1 (14.5 ounce) can peeled and diced tomatoes 1 (10.75 ounce) can condensed cream of mushroom soup 1 (12 ounce) package corn tortillas 4 cups shredded Cheddar cheese 2 tablespoons chili powder (I use about 1/3 to 1/2 package of Chili-O seasoning instead) (If your family likes to "spice" it up, you can add a can of drained chiles...jalapenos...add some tabasco...something else! Otherwise, it will be very mild...We like mild around our house (except my husband) so my little one can eat this just as it is...and my husband can stick some tabasco on his!) DIRECTIONS: 1. Preheat oven to 350 degrees F (175 degrees C). 2. Brown the ground beef in a large skillet over medium high heat. Add chili powder, beans, tomatoes and soup; mix well and heat thoroughly. 3. Line a 13x9 inch dish with tortillas. Then make a layer with the meat mixture. Make another row of tortillas, then finish off with rest of meat mixture. Top with grated cheese. 4. Bake in a preheated oven for 30 minutes. |
