I pulled Minestrone Soup with Ground Beef out of my freezer. The recipe is VERY similar to Shirelle's. I really like how ingredients can be substituted in this soup ... like cauliflower instead of cabbage. Also, I cook the macaroni separate and put it in the individual bowls of soup. If there are leftovers, the macaroni gets soggy. It's an easy soup to freeze, if you don't have the macaroni in it.

I love soup when it's cold like this! I usually make a veg/beef one but tonight we're having my first attempt at chicken tortilla soup.
