Red Beans and Rice
Bayou Country Favorite

From The Cotton Country Collection
ISBN 0960236406

2 cups red beans (I just use 1 reg. sized bag)
1 onion, diced
2 cloves garlic
2 tsp. seasoning salt
Bay leaf
Pinch of sugar
Red Pepper to taste
Ham Hocks
Large link sausage, sliced
Cooked Rice

Rinse beans, soak overnight (very important - you don't want crunchy beans!!) and drain. Cover beans and all ingredients with cold water. Bring to boil, reduce heat and simmer until done, approx. 2 hours or so. Add sausage during the last 30 minutes of cooking. Serve over rice.

Something I do for red beans though instead of soaking overnight is to boil them on high for about 30 minutes.. this also helps reduce gas.. leave it to soak in that boiled water for about an hour, and then start cooking til nice and tender! I find it to be quicker and easier esp if you forget to start soaking in the night (something I tend to do alot) and if you get a sudden craving for those yummy red beans!! OH! and if doing that method, be sure to drain the red water from the soaking before cooking!
