I just made the BEST ever Spinach and Artichoke dip for the party my DH and I are hosting on Sat night. I could have eaten all of it tonight. FYI-I tripled the recipe when I made it for the crowd this Sat.
8 oz sour cream
4 oz cream cheese
8 oz Monterey Jack cheese
3/4 cup Parmesan
2 boxes chopped spinach, thawed and drained
1/2 onion, chopped
1/2 tsp garlic, minced
1 stick margarine
1 can artichokes, coarsely chopped and drained
Saute’ onions and garlic in margarine. Add all other ingredients, blending well. Stir over low heat until cheeses melt. Serve with Tostitos or Melba Rounds.

Oh yum! I love Spinach and Artichoke dip! Too bad dh wont even try it, I don't know that I could eat all that myself- well maybe. :lol

YUM!! I just had Chili's new Spin Art Dip last night and it was so yummy and I am wanting more. Maybe I will try this recipe soon!

This recipe is awesome! I Made something similar not too long ago. I saw one recipe that called for sour cream, and one that called for cream cheese, so I used both. I used onion powder and garlic powder though. It was still awesome! Thanks for sharing! I always like having an actual "recipe" :)

oh my gosh! I'm obsessed with spinach/artichoke dip! every wher ei go that has it, i have to try it! I'll DEFFINATLY try out this recipe while family is here :)

So do you prepare the whole thing in a skillet or use a food processor? The blending thing threw me off....
