Does anyone have some good recipes for the crock pot? I am a working single mom and would love some easy dinner (somewhat healthy). Kylee is starting to want more solid foods (although she still spits out the pasta in her Level 3 baby food??) and I am having a hard time figuring out what to feed her. She loves Smart dogs and meatless chicken nuggets (trying to do the no hormone, organic thing somewhat) and has had some regular chicken too. I would love any help you can give me!! :confused

One of the easiest recipes I've recently found consists of chicken breasts, Catalina dressing, onion soup mix, and apricot preserves. I think I cooked it for 7 hours in the crockpot on low. It's really tasty, but I don't know if you can find a healthier version of Catalina dressing at a place like Whole Foods. Anyway, here's the original, non-crock pot version from Kraft Foods:

I don't have any I've tried that I just love -- we don't use our crockpot very often-- but I've found some on www.kraftfoods.com (http://www.kraftfoods.com) that I'm trying this week. They have a Recipe Connection section where people can post their recipes and when someone tries it, they can rate it. At least that way you have some idea of the ease and taste.

Something else you can try for quick and easy is Cooking Light 5 and 15 cookbooks. The recipes are healthy and require only 5 "major" ingredients (excludes things you typically have on-hand like salt, sugar, flour, etc) and 15 minute prep time (most of them are 15 minutes or less TOTAL time, some it's just prep and cooking is a bit longer). We cooked out of ours regularly when I was working outside of the house. I go through spurts where I use my crock pot a lot but with my family of 5 (plus my kids eat like no tomorrow) I think most of it would just be way too much for you. Plus, a lot of it is beef. Actually, sometimes I do a whole chicken in there which you could do & have the rest on hand for later in the week. I just put it in breast side up with sliced onion & carrot around it for flavor, drizzle the top with olive oil & sprinkle with salt, pepper, garlic powder & rosemary. I also pour in about 1/4-1/2 cup either white wine, water or broth. You can also just put in chicken pieces & pour some BBQ sauce over them.

Do a yahoo or google search for +crock pot +recipies. There are a few websites that have TONS of recipes that I use (just can't think of the website right now). But that should give you tons to look through.

BTW, I should also mention you can cook the Catalina Chicken in the slow cooker on 3-3 1/2 hours on high as well. That's what I did today! And you can skip the chicken browning called for in the original recipe; I've done that the last two times I've made it and it's turned out fine. :)

Oh, and in the LLL cookboook, there's a great non-crockpot recipe called Easy Beef Stroganoff. I recommend trying it; it's surprisingly good considering it has so few ingredients.
