I'd love to get some potato soup recipes! ~~ even better would be recipes I can make in the crockpot. Post your yummiest potato soup recipes.

I don't really have a recipe (I've only made it once), but I just wanted to add that smoked sausage is really good in potato soup.

I have one its AWESOME!!! I will post it later...You cook it in the oven but you could probably do it in the crock...SUPER DUPER EASY & YUMMY!!!:bounce

Corn and Potato Chowder

6 slices bacon, crumbled
4 medium potatoes, peeled and diced
1/2 cup minced onions
1 (16 oz) can of creamed corn
2 cans of chicken broth
1 tsp salt
1/4 tsp pepper
1 can (12 oz) evaporated milk
2 cups shredded cheese (optional)

Put everything except the milk and cheese in a crock pot. Cover and cook on low for 8-10 hours. Add milk and cheese and cook covered for another 30 minutes.

Baked Potato-Cheddar Soup

2) 10-3/4oz. Cans Cream of Potato Soup

2)15oz. Cans Sliced Potatoes, drained

1 Pt. Whipping Cream

1 Cup Milk

1Cup Shredded Cheddar Cheese


Pour soups, potatoes, whipping cream & milk into an ungreased 2-quart casserole dish; mix well. Cover & bake @ 400 degrees for 45minutes to one hour. Ladle into serving bowls; sprinkle with cheese. Makes 6 servings.
You can sprinkle w/bacon bits & sliced green onions too!


***Okay, when I made it for us I doubled the soup & did diced & sliced potatoes. Next time I'm just going to use diced potatoes. I like it better w/the diced ones. I might have even used 3 cans of potatoes...Its REALLY YUMMY & super easy to make...Everyone :heartbeat it!!!

Potato Leek Soup

2 C water
2 medium potatoes, peeled and diced
2 bacon strips, cooked and crumbled
2 C milk
¾ C mashed potato flakes
1 pkg (1.8 oz) leek soup and dip mix
Shredded cheddar cheese
<O:p</O:p

Directions

In a large saucepan, bring the water, potatoes and bacon to a boil. Reduce heat; cover and simmer for 10-15 minutes or until potatoes are tender. Reduce heat to low. Stir in milk, potato flakes and soup mix. Cook and stir for 5 minutes or until heated through. Garnish with cheese.
Makes 5 servings


It's really fast and easy. I also like to garnish with bacon.

These sound really good...I'm going to have to try them. It's nice to have a different meal in the routine. I always like getting potato soup from cotton patch! ;)
